Comfortably Yum

Ingredients
2 ounces black tea (over steeped)
¾ ounces “Blueberry Yum Yum” syrup
¾ ounces fresh lemon juice
Club soda or sparkling water
Garnish
Candied ginger
Lemon wheel
Mint bouquet
Blueberries
“Blueberry Yum Yum” Syrup
Sugar
Water
Blueberry puree
Cinnamon powder
Ginger powder

METHOD
Make a 1:1:1 simple syrup with equal parts sugar, water, and blueberry puree. Add cinnamon powder and ginger powder to taste. Strain if desired.
Combine the tea, syrup, and lemon juice in a cocktail shaker. Add ice, shake well, then pour. Top off with club soda or your favorite sparkling water. Garnish with candied ginger, a lemon wheel, a mint bouquet, and three blueberries.
Rainier’s Notes: A fermented, earthy tea like Tuo-cha Pu-erh works best. In lieu of powder, you can use fresh or frozen whole ingredients.
