Makes 3 Dozen
Ingredients
243 grams 1-minute oats
208 grams sugar
193 grams vegetable oil
1 egg, beaten
204 grams flour
16 grams baking powder
4.8 grams kosher salt
50 grams whole milk
16 grams imitation vanilla extract
*raisins optional
METHOD
Preheat the oven to 400°. In a large mixing bowl, combine oats, sugar, oil, and the beaten egg, stirring to combine. In a small bowl, combine the flour, baking powder, and salt. In thirds, add the flour mixture into the large mixing bowl (that contains the oat/oil mixture) stirring between additions until all of the flour mixture is added. Lastly, stir in the milk and vanilla until fully incorporated.
Using a tablespoon, scoop equal portions of the cookie dough onto a parchment-lined (silpat baking mat) baking sheet, approximately 3” apart.
Wet a finger with water and press each cookie out until thin. Top each cookie with 5-6 raisins if desired.
Bake until crispy and golden. Remove the cookies immediately from the baking sheet and allow to cool on a dish.
