Ashley and Curtis Skaggs started out as mushroom farmers, not kombucha brewers. But their family of five (they have three sons) had a collection of health issues that they eventually linked to poor gut health. They decided to add probiotics to their diet, and kombucha was the most palatable option, so they started brewing. Since they were already selling mushrooms at the farmers market, they took some kombucha along to see how it sold. It was immediately popular. Three years later, Henosis Drink Co. (it means “unity and oneness” in Greek) is their full-time job.
Although they no longer grow mushrooms, fungi still have a solid place in their business: Every can of kombucha has a daily serving of both reishi and lion’s mane. “Mushrooms have a symbiotic relationship with one another,” Curtis says. They’re like the Avengers — Thor, The Hulk, and Iron Man can wreck some things, but together they are stronger.” Lion’s mane is excellent for brain health, while reishi is like a general multivitamin with multiple benefits.
As health foods go, this is a fun one. Kombucha is fizzy like a soda, and Ashley compares it to a “sweet-tart sweet tea,” to which they add various organic juices for flavor. Their sons are in charge of R&D. “When they agree on a flavor, I think, ‘That’s it,’” Curtis says.
